Mojito Recipe

I absolutely love a good Mojito, so it was only fitting to have indulged in one on the eve of my Birthday! It's the refreshing mix of mint and lime together that makes me feel light and breezy without a care in the world - surely its nothing to do with the Bacardi, and everything to do with those two perfectly matched flavours!

If you havn't experienced a Mojito yet, you are missing out! They are so easy and only require a few ingredients; make as a single drink, or increase the mixture to put together a pitcher of this good stuff.


What you need:

10-15 fresh pungent mint leaves (go to the plant shop and by a mint bush today if you don't have this amazing herb growing in your back garden already)
1 fresh lime
1 1/2 shots of Bacardi (white run)
2 tsp caster sugar
Soda water
Ice

Method:
Rip up those gorgeous mint leaves and toss into a glass, add the sugar and quarter the fresh lime and add to the glass.

Use the back of a spoon or a pestle to 'muddle' the lime, sugar and mint leaves together - the sugar helps bruise the mint leaves to release the flavour of the mint.

Pour in the Bacardi and top the glass with ice and soda water!

Find a sunny spot, put your feet up and enjoy!
